I love getting in extra protein and I do this by adding protein powder to most all of my baked goods! There are some protein powders that bake better than others - you just have to experiment and taste test as you go!
For this banana bread recipe I used a pancake recipe and baked it instead of putting the mix on the griddle. I just wanted to try something a little different. As you can see it is super thin because I put it in a pretty large pan. I have also done this recipe with a loaf pan as well!
Be sure to have fun and experiment! Don't be scared to try new things -- and, by baking these it saved me time standing in front of the griddle....it was a "stick in the oven and walk away" kind of meal!
