This has become a constant in my food prep each week. It is SUPER easy to make, versatile in recipes, and really healthy (31.7 grams of protein, 9.5 grams of carbs, 1.6 grams of fat).
My "go-to" is either topping a nice big salad with the seitan or having it for breakfast with some maple syrup with a side of oatmeal!
As a busy professional anything I can do that makes life easy throughout the week is a win for me! This literally takes about 10 minutes to mix up and then it just goes into the oven....can't get much easier then that!
Travel tip: I have several conferences coming up and I am actually going to meal prep and take these with me. So many times hotels don't have good vegan options, especially with protein (loaves of bread don't cut it folks....neither does a little bowl of Iceberg lettuce). I can take this with me and heat it up in the microwave in the morning before the conference starts so I am fueled and ready to go for the day (I could also bring it with me to the conference and top the sad salad that is given to me....it's all about options)! I will also bring oatmeal (and dried fruits and nuts) and make that in my hotel room with the hot water from the coffee machine. Easy hotel room breakfast that it filling and healthy - and doesn't take much space in your bag to pack!
